Ragi, Mandua Atta, Koda (Finger Millet)– Recipes

Finger millet is also known as Ragi in Southern India while known as Mandua Atta or Koda in The Northern part of India. Traditionally grown in arid and tropical regions, it is a native African crop.

Ranked high on the nutrition scale, Ragi is a staple food in South India. The production of Millet predominantly affected farming in the South. Karnataka and Tamil Nadu mark the highest production of finger millets in India. A variety of Ragi-based dishes are popular in states such as Maharashtra, Tamil Nadu, Karnataka, and Andhra Pradesh.

The Finger Millet is known as Mandua or Koda in India's northern part and comes as a specialty from the Kumaun region in Uttarakhand. Mandua is one of the most grown cereals in the hills of Northern India. Kumaoni people use Mandua or Koda mostly for making chapati with its flour, also called as Mandua ka Atta or Koda ka Atta by Kumaoni people. The majority of people prefer this wholesome diet. 

Mandua Atta(Kodo)/ Finger Millet Recipes

 India is highly popular for its simple but mouth-watering delicacies prepared from Mandua/Koda ka Atta. Some of those dishes are given along with their recipes.

  1. Mandua(Koda) ki Roti 

Required Ingredients 

  1. Mandua/Koda ka Atta (Finger millet flour)
  2. Water
  3. Wheat flour

Steps – 

  1. Mix both finger millet flour and wheat flour.
  2. Now, add water and make a dough using it. 
  3. Taking small size balls roll out.
  4. Roll the roti and cook both sides, your Koda Ki roti is ready.

 

  1. Mandua/Ragi Cookies

Required Ingredients

  1. Mandua k Atta
  2. Wheat flour
  3. Butter
  4. Powdered sugar
  5. Baking powder

Steps – 

  1. Roast Mandua ka Atta on medium flame.
  2. Mix both flour together add powdered sugar and mix flame
  3. Add melted butter and prepare the dough, preheat the oven for 15 minutes.
  4. Divide dough into small balls and flatten them
  5. Place them on the baking pan after applying some butter to it.
  6. Bake them for around 12 minutes at 170°C and when cooked, let them cool for some time.

Ragi malt- A nutritious drink that is easy to digest.

Required Ingredients

  1. Sprouted Ragi Flour
  2. Water
  3. Jaggery or Gur

Steps – 

  1. Mix 4 tsp sprouted Ragi flour in half cup water, mix well and form a smooth paste
  2. Add 4 tsp jaggery powder to 1 cup of boiled water.
  3. Now add Ragi taste and stir continuously to avoid lump.
  4. Cooker 12 for around 5 minutes and you are good to serve it
